BBQ-Onion Burgers

Barbecue sauce, bacon and onions are the burger topping trifecta, lending grilled patties a sweet and smoky aroma.

  • Ingredients:
  • 4 strips bacon, cut into 1/2-inch pieces
  • 1 tablespoon vegetable oil
  • 2 large sweet onions, thinly sliced
  • Salt and freshly ground black pepper
  • 1/2 cup barbecue sauce
  • 4 hamburgers (1/4 lb each)
  • 4 hamburger rolls

Preparation:
Fry the bacon until crisp, transfer to a paper towel-lined plate and drain all but 1 tablespoon of the bacon fat from the pan. Add the vegetable oil and return the pan to the stove over medium-low heat.

Separate the onions into rounds, add them to the pan, cover and cook for 12 to 15 minutes, stirring 3 or 4 times during the process. Remove the cover, raise the heat to medium and season with salt and pepper. Continue cooking, uncovered, for 15 to 20 minutes, stirring frequently and loosening any browned bits that may accumulate on the bottom of the pan. Add the barbecue sauce, bacon and a little water if needed, reduce the heat to medium-low and continue cooking, stirring occasionally, for an additional 5 to 10 minutes.

Top cooked burgers with the onion mixture and serve.
