Pastry-Wrapped Blue Cheese Pears
Ingredients ~
3 Anjou, Bartlett or Bosc pears
1/4 cup blue cheese crumbles
1/4 cup whipped cream cheese
Salt and pepper to taste
Dash of lemon juice
Puff pastry sheet, defrosted
Toasted, crushed almonds for garnish
Preparation ~
Preheat oven to 400F and line a cookie sheet with parchment paper.
Peel your pears from core to stem and slice in half, leaving stem in tact.
Use a spoon or melon baller to remove seeds and leave a small well. Rub both sides of the pears with lemon juice.
Cut the sheet of pastry into six rectangles. Lay each pear half cut side down on the parchment and cover with a piece of puff pastry.
Shape the pastry around the pear and trim off the excess pastry with a sharp knife. Bake for 20 minutes, until pastry is crispy and golden.
Combine blue cheese, cream cheese, salt and pepper in a bowl. Fill each pear half with a spoonful of the blue cheese mixture and top with toasted almonds. Serve warm.
