Cranberry, Jalapeño and Brie Tarts
Ingredients ~
2 packages frozen mini fillo pastry shells (30 shells)
4 oz brie, cut into 1/4" cubes
12 oz fresh cranberries
1/2 cup orange marmalade
1/4 cup sugar
1/2 cup water
Pinch of salt
1/2 tablespoon fresh orange zest
1 to 2 jalapeño peppers, seeded and diced
Preparation ~
Preheat the oven to 350°F and place the pastry shells on a large cookie sheet. Place 2-3 brie cubes into each shell.
Coarsely chop cranberries in a food processor. In a pan over medium heat, add cranberries, orange marmalade, sugar, water and salt and cook about 30 minutes until reduced to the consistency of cranberry sauce.
Allow to cool slightly and stir in fresh orange zest and jalapeño.
Bake pastry shells for 10 to 12 minutes, until brie is melted and shells are slightly golden.
Spoon about a tablespoon of the cranberry mixture on top of each tart. Serve warm.
