Poicinn Apple Cupcakes
Ingredients ~
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/2 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 teaspoon vanilla extract
1 teaspoon rum extract
2 eggs
1-1/2 cups unsweetened apple sauce
Preparation ~
Preheat oven to 350ºF. Line 18 muffin tin cups with cupcake wrappers.
In a medium bowl, combine flour, baking powder, baking soda, salt and spices and sift together. In a stand mixer, beat together butter, brown sugar and both extracts at high speed until fluffy.
Add in eggs one at a time, followed by the applesauce. At low speed, add flour mixture and mix until just combined.
Spoon into cupcake wrappers and bake for 18 to 20 minutes, until a toothpick inserted in the center of the cupcake comes out clean.
Note: If your applesauce looks watery, strain it through a fine mesh strainer first.
Cool completely before decorating with cream cheese frosting.
Makes 18 cupcakes
Cream Cheese Frosting
You can use this basic cream cheese frosting recipe to frost both of your cupcakes! Divide it into two batches: the first half is left plain to frost your favorite red velvet cupcakes (click here for a recipe).
For the second half, add red food coloring and 1/2 teaspoon cinnamon to frost the Poicinn Apple Cupcakes.
10 tablespoons butter, softened
8 teaspoons buttermilk
2 8-oz blocks cream cheese, softened
2 pounds confectioners' sugar
2-1/2 teaspoons vanilla extract
Beat first three ingredients in a mixer at high speed until fluffy. Slowly add powdered sugar and beat until smooth. Fold in extract.
