        <![CDATA[<h4>Smoky BBQ Rub</h4>
<h4>What you'll need ~</h4>
<ul class="left">
<li>2 teaspoons smoked paprika</li>
<li>4 tablespoons sweet paprika</li>
<li>1 tablespoon salt</li>
<li>3 tablespoons brown sugar</li>
</ul>
<ul class="right">
<li>2 teaspoons dry mustard</li>
<li>1 teaspoon black pepper</li>
<li>1 tablespoon garlic powder</li>
<li>2 teaspoons onion powder</li>
</ul>
<p style="clear: both;">1. Combine all ingredients in a small bowl and mix well.</p>
<p>2. Transfer the rub mix to a small mason jar or other airtight container.</p>
<p>3. Attach gift tag!</p>

        <![CDATA[<h4>Whitewashed Flower Pots</h4>
<h4>What you'll need ~</h4>

<li>White acrylic paint</li>
<li>Paint brush</li>

<li>Reindeer moss</li>
<li>Silk spring flowers and decorative picks</li>
</ul>
<p style="clear: both;">1. Dip a dry paint brush in the white acrylic paint and wipe most of it off on a paper towel. Dry brush on the terra cotta pots with short strokes and dabbing motions. If the paint is going on too thick, quickly wipe it off with a clean paper towel before it dries. Stop when you've achieved the amount of coverage you like.</p>
<p>2. Once the pots are dry (about 10 minutes), cut a piece of floral foam to fit inside each pot. Arrange the silk flowers and decorative picks to your taste.</p>
<p>3. Cover the top of the floral foam with the reindeer moss until you can no longer see it.</p>
<p>Note: You can make your own decorative picks with unpainted plywood shapes from the craft store. I made a ladybug, a picket fence and a lamb. Paint them as you please - I applied the same whitewash technique used on the pots. I just added some dabs of pink paint, as well. Then, simply hot glue the shapes to 3-1/2" wooden craft picks.</p>

<h4>Pom Pom Chick</h4>
<h4>What you'll need ~</h4>
<ul class="left">
<li>Yellow yarn (I used Sunshine by Lion Yarn)</li>
<li>Forks (A salad fork and serving fork work well)</li>
<li>Scissors</li>
</ul>
<ul class="right">
<li>4" 20 gauge gold tone jewelry wire</li>
<li>Orange felt</li>
<li>Craft glue or hot glue gun</li>
</ul>
<p style="clear: both;">1. Start by making the pom pom for the chick's body. Cut a short piece of yarn (about 4") and set it aside. Wrap your yellow yarn around the larger of your forks about 40 times. Trim the end of the yarn, being careful not to let your yarn unravel. Take the short piece of yarn and tie it tightly around the middle of the loops (you can slip the yarn through the middle tines of the fork to do this). Double knot it, just to be safe. With sharp scissors, cut through the loops on each side. Fluff out your pom pom and trim any pieces that are too long.</p>
<p>2. Repeat the same process for the head of the chick, this time wrapping the yarn about 20 times around a salad fork.</p>
<p>3. Cut a small triangle from the orange felt for the beak, and two rounded triangle shapes for the feet.</p>
<p>4. Glue the beak onto the chick's head, and then glue the head to the body.</p>
<p>5. Take your wire and bend it into a U-shape with your fingers. Thread it through the center of the body pom pom. Bend each side of the wire to form a "knee" and then again to form the "foot" - this part should be flat and parallel to the table. Adjust the wires until the legs allow the chick to stand up without toppling over.</p>
<p>6. Glue your orange felt feet to the wire.</p>
<h4>Yarn Carrot</h4>
<h4>What you'll need ~</h4>
<ul class="left">
<li>Orange and green yarn (I used Goldfish and Sweet Pea by Lion Yarn)</li>
<li>3" styrofoam cone</li>
</ul>
<ul class="right">
<li>Scissors</li>
<li>Craft glue or hot glue gun</li>
</ul>
<p style="clear: both;">1. Start by making the carrot greens - this is a pretty standard yarn tassel. Cut a short piece of yarn (about 4") and set aside. Wrap the yarn about 10 times around four fingers. Trim the end of the yarn, being careful not to unravel your loops. Carefully slide the yarn off your fingers and tie a tight knot a knot with the 4" piece, about 1/2" in from the end of one side of the loops. Double knot it. Cut through the loops on the other end (the side you didn't tie the knot on). Trim the yarn ends so they're more or less even.</p>
<p>2. To make the carrot, you'll be wrapping the styrofoam cone with the orange yarn. If you want a perfectly even look, you'll want to coil the yarn carefully. I went for a more organic look, which allowed me to wrap the yarn quickly. I found it's easier to start at the wider end of the cone and work down to the tip.         <![CDATA[<h5>Appetizers ~</h5>
<p>In looking for an appetizer that wasn't rich or overly filling, we chose to serve a duo of dips/spreads for crusty bread. The flavors in our chunky, mixed olive spread and lemony dipping sauce go together really well and both are easy to make and can be prepared in advance.</p>
<h5>Accompaniments ~</h5>
<p>Side dishes for a boldly flavored entr&eacute;e like this roasted lamb need to complement rather than compete, so it's important to keep it simple. Asparagus is a spring favorite in Italy as well as here in the US, and simple preparation really highlights its natural, fresh flavor. In this recipe, the asparagus is steamed until tender, then drizzled with a balsamic brown butter for serving. </p>
<p>Our creamy risotto gets a hint of smoky flavor from pancetta that's been saut&eacute;ed until crisp. A handful of peas and some sliced scallions tossed in just before serving give the dish a pop of color and a little extra flavor.</p>
<p>In Italy, risotto would more than likely be served as a first course ahead of the lamb and asparagus; however, we served it along with the entr&eacute;e as is customary in the US.</p>
<h5>Dessert ~</h5>
<p>As impressive as our roasted lamb was, our favorite part of this meal was the ricotta pie we made for dessert.</p>
<p>From a preparation standpoint, this dish isn't really a pie, but a cheesecake made with ricotta cheese instead of cream cheese and a buttery tart crust in place of graham crackers. In terms of flavor and texture, however, there are subtle differences from conventional cheesecakes that make it truly unique.</p>
<p>Flavored with lemon extract and orange zest and not a lot of sugar, this is a sophisticated, lightly sweet dessert with a silky texture. It's delicious topped with fruit or whipped cream, but truthfully we like it best plain.</p>

<h4>Blow out the eggs ~</h4>

<p>Take your needle or safety pin and poke a hole at the top (narrow end) of the egg. Don't be afraid to exert some pressure - the egg can handle it.</p>
<p>Next, poke a hole on the bottom of the egg. Wiggle the needle around inside the egg to help break up the membrane and yolk. Widen each of the holes a bit, and hold the egg over your clean bowl.</p>
<p>*Due to the safety issues present in raw eggs, this method of blowing out eggs avoids direct contact. A drinking straw seems to do the trick, as would an ear syringe from the drugstore.</p>
<p>Blow through the straw into the top hole of the egg until the fluid comes out. You may need to shake the egg gently and insert the needle again to break up the yolk further.</p>

<p>Once the egg is empty, cover and refrigerate the whites and yolks and use them later in a well-cooked egg recipe (i.e. quiche or omelet).</p>
<p>Now, sanitize your eggshell in boiling water for 10 to 15 minutes. You can proceed to dye them using our natural dye recipe or you can leave them as is.</p>
<h4 style="clear: none;">Make the planters ~</h4>
<p>Now that you have a nice hollowed-out eggshell, you can carefully remove the top of the egg. Take your clean needle and poke at the existing hole until it starts to widen and crack.</p>
<p>Then, use your fingers to tear away bits and pieces until you have a big enough opening to insert your plant or flower.</p>
<p>Take a small piece of cotton and lay it in the bottom of the eggshell. Next, gently transfer your plant and soil into the egg. The cotton allows for mess-free drainage.</p>]]>

<p>Despite the use of cider in early recipes, today's traditional Swiss fondue is made with a combination of Gruyere and Emmentaler cheeses, dry white wine and a splash of kirsch (cherry brandy). Our recipe provides easy, step-by-step instructions for creating this classic appetizer dish with perfect results.</p>
<p>For a main course, we serve an oil fondue. Bite-sized cubes of beef tenderloin and jumbo shrimp are seared in hot oil and served with six quick-to-fix dipping sauces to add a variety of flavor profiles.</p>
<p>For dessert, our chocolate fondue is made with chocolate chips for easy melting and includes a splash of orange liqueur for added flavor. You don't even need a fondue pot for this one because the chocolate is melted on top of the stove, then transferred to a ceramic crock which keeps it warm and melted for a while. Reheating can even be done in the microwave (carefully).</p>

<h5>A few simple elements can add romantic charm to your table.</h5>
<p>We always try to keep our table d&eacute;cor simple. Our Valentine's Day setting uses doily wrapped votive holders, a milk-white vase decorated with heart-shaped, removable decals and delicate pink ribbons and ornaments to decorate each place setting.</p>
<p>The centerpiece is an easy diy project made with paper mache letters and silk flowers. <p>Traditional celebrations include a family reunion dinner which often includes dishes that symbolize good luck, prosperity, happiness and good health.</p>
<p>Farina Kingsley, author of three Asian cookbooks and a recently launched cookbook app (see details below) has shared a few of her authentic Chinese recipes to help you celebrate the New Year. Her menu includes:</p>
<p>&bull; Steamed Pork and Cabbage Dumplings (symbolize prosperity & good fortune) 
<br />&bull; Ginger-Soy Steamed Fish (eating fish brings good luck)
<br />&bull; Vegetable Chow Mein (noodle dishes represent longevity)</p>

        <![CDATA[<p>Farina, who is half Chinese, also shares a few of the traditions her family has always followed for their celebratory feast:</p>
<p>&bull; Gift "hong boa" - red envelopes with cash for good luck.
<br />&bull; Fill your home with traditional snacks like tangerines and sugar coated dried fruit to symbolize gold and good fortune.
<br />&bull; Leave a bit of uneaten food on your plate to symbolize a surplus for the year to come.</p>
<h4>Steamed Pork and Cabbage Dumplings</h4>
<ul class="left">
<li>1 package thin round dumpling wrappers</li>
<li>1/2 lb ground pork</li>
<li>3 cups minced Napa cabbage</li>
<li>8 shiitake mushrooms, dried, reconstituted, stemmed and minced</li>
<li>3 green onions, minced</li>
<li>2 cloves garlic, peeled and minced</li>
<li>1 tablespoon minced fresh ginger</li>
</ul>
<ul class="right">
<li>1 tablespoon light soy sauce</li>
<li>1 teaspoon toasted sesame oil</li>
<li>1 tablespoon cornstarch</li>
<li>1 teaspoon salt</li>
<li>1/8 teaspoon ground white pepper</li>
<li>1/4 cup canola oil</li>
</ul>
<h5>Ginger-Soy Dipping Dauce</h5>
<ul class="left">
<li>1 teaspoon minced green onions</li>
<li>1 teaspoon minced red chilis</li>
<li>3 tablespoons light soy sauce</li>
<li>2 tablespoons black or rice vinegar</li>
</ul>
<ul class="right">
<li>1/2 teaspoon toasted sesame oil</li>
<li>1/4 teaspoon sugar</li>
<li>1 teaspoon warm water</li>
</ul>
<p class="clear">For the filling, place the cabbage and salt in a large bowl and mix well. Set the cabbage aside for 20 minutes to let the salt leach excess water from the cabbage.</p>
<p>To make the dipping sauce, whisk together the soy sauce, rice vinegar, sesame oil, water, sugar and green onions in a small bowl. Set aside until ready to serve.</p>
<p>In a large bowl, combine the pork, mushrooms, green onions, ginger, garlic, soy sauce, sesame oil, cornstarch and white pepper and mix well. Use your hands to squeeze all the water out of the cabbage. Discard the excess water, add cabbage to pork filling and mix until well combined.</p>
<p>To make the dumplings, place the dumpling wrapper on your palm, brush water around the edge and fill the center with a heaping tablespoon of filling. Fold the wrapper in half to form a half moon. Use your thumb and index finger of one hand to fold 4 to 5 pleats across the back side of the dumpling, pressing the edges together to seal the dumpling. Gently curve the dumpling so that it sits up when placed on a flat surface. Place the finished dumplings on a baking sheet lightly dusted with cornstarch and cover with a damp towel. Repeat with the remaining wrappers and filling. (To serve at a later date, freeze the dumplings in a single layer until they are hard and then transfer to a sealable plastic bag. Steam the dumplings directly from the freezer for 10 minutes.)</p>
<p>To cook the dumplings, heat a large non-stick skillet over medium heat. Add 1 tablespoon of vegetable oil to the hot pan. Place 8 to 10 dumplings in the pan and brown the bottoms until golden brown, 1 to 2 minutes. Add 1/4 cup water to the pan, cover with a lid and steam until all the water evaporates, 6 to 7 minutes. Transfer the cooked dumplings to a warmed platter and cover with foil. Cook the remaining dumplings and serve warm with the ginger-soy dipping sauce.</p>
<p>Makes 30 dumplings</p>

<h4>Ginger-Soy Steamed Fish</h4>
<ul class="left">
<li>1 1/2 lbs or 4 (6 oz) sea bass or halibut filets</li>
<li>1/4 cup green onions, white parts only, finely sliced on the bias</li>
<li>3 tablespoons cilantro leaves</li>
<li>5 tablespoons canola oil, divided</li>
<li>2 tablespoons fresh ginger, finely sliced into slivers</li>
<li>2 cloves garlic, minced</li>
</ul><ul class="right">
<li>1 tablespoon light soy sauce</li>
<li>1 tablespoon dark soy sauce </li>
<li>1 teaspoon oyster sauce</li>
<li>1 teaspoon toasted sesame oil</li>
<li>1/2 teaspoon sugar</li>
<li>1/2 teaspoon cornstarch</li>
<li>1/8 teaspoon ground white pepper</li>
</ul>
<p class="clear">Place a steaming rack in a wok or a deep pan and fill the pan with 2 inches of water. The water should be below the steaming rack. Bring the water to a boil over high heat.</p>
<p>To make the sauce, combine the ginger, garlic, 3 tablespoons of the canola oil, light and dark soy sauce, oyster sauce, sesame oil, sugar, cornstarch and white pepper in a small bowl.</p>
<p>Place the fish filets on a plate suitable for steaming and large enough to hold the filets in a single layer. Spoon the sauce evenly over the fish filets.</p>
<p>Place the plate of fish on the steaming rack, cover tightly and steam the fish over high heat for 7 to 10 minutes per inch thickness of fish. Carefully remove the plate from the steamer and transfer the filets to a warmed platter and spoon the sauce over the fish.</p> 
<p>To serve, heat the remaining 2 tablespoons of oil in a small pan until near smoking. Place the green onions and cilantro on top of the fish filets and carefully drizzle the hot oil over the fish. Serve immediately.</p>
<p>Makes 4 servings</p>

<h4>Vegetable Chow Mein</h4>
<ul class="left">
<li>1/2 lb egg noodles, fresh, standard size or 3 oz dried </li>
<li>2 tablespoons oyster sauce </li>
<li>2 tablespoons dark soy sauce </li>
<li>1 tablespoon light soy sauce </li>
<li>2 tablespoons rice vinegar </li>
<li>1 teaspoon sugar </li>
<li>1 tablespoon toasted sesame oil</li>
</ul><ul class="right">
<li>3 tablespoons water</li>
<li>4 tablespoons canola oil, divided</li>
<li>1/2 cup thinly sliced yellow onion </li>
<li>1 cup thinly sliced red bell pepper </li>
<li>1 zucchini, cut into thin strips </li>
<li>1 cup thinly sliced shiitake mushrooms, fresh </li>
<li>1 tablespoon grated fresh ginger </li>
<li>2 cloves garlic, minced </li>
</ul>
<p>Bring a large pot of water to a boil and add 1 tablespoon of salt. Boil the noodles for 2 minutes, drain and rinse well with cold water. Place the noodles in a bowl and toss with 1 tablespoon of oil.</p>
<p>In a small bowl, combine the oyster sauce, dark and light soy sauce, rice vinegar, sugar, toasted sesame oil and water and set aside. </p>
<p>Heat a large non-stick pan until very hot. Add 2 tablespoons of the oil and saute the onion and red bell pepper until just tender, 2 minutes. Add the zucchini and mushrooms and continue to stir-fry until golden brown, 5 minutes. Transfer the vegetables to a bowl.</p>
<p>Reheat the same pan until very hot. Add remaining 2 tablespoons of oil and saute the ginger and garlic for several seconds. Add the noodles and stir-fry until the noodles are heated through, 5 minutes. Return the vegetables to the pan with the noodles, add the sauce and continue to toss the noodles until they are well combined and heated through. Transfer to a warmed platter and serve immediately.</p>
<p>Makes 4 servings</p>

<h5>What you'll need ~</h5>
<ul><li>Paper mache letters (we used Darice 8" letters)</li>
<li>Hot glue gun</li>
<li>Silk flowers (we used pink carnations, about 3-4" in diameter)</li>
<li>Paint</li>
</ul>

<p>1. Start by painting your paper mache letters. Choose a coordinating color for your flowers. Allow to dry completely.
<br />2. Prepare your flowers. For our letters, which only have flowers on one side, we needed about 10-12 flowers for each one. If you want flowers on both sides, you'll need to double that. Disassemble the silk flowers by removing the plastic stems and any plastic parts in the center. You should be left with just a stack of the petals.
<br />3. Heat up the glue gun and place a small dab in the center of each flower. Carefully (don't burn your fingers) pinch the center of the stack of petals to hold them together. Once the glue has set, you can glue the flowers to the letter.
<br />4. Continue until your letters are completely covered in flowers. If you plan to use these as table de&eacute;cor, be sure you leave a little space near the bottom of the letters so they can still sit flat on a surface.</p>]]>

<h4 style="text-decoration: underline">The Accompaniments</h4>
<h5 style="padding-top:10px">Buttered Pumpernickel Rounds</h5>
<p>Get a loaf of fresh, thin-sliced pumpernickel bread. Using a round biscuit cutter, cut 2 or 3 rounds from each slice. Spread each round with a very thin layer of softened butter and sprinkle them with a pinch of salt. Bake in a 400° oven for 5 to 7 minutes, until toasted and crisp.</p>
<h5 style="padding-top:10px">Spice-Toasted Almonds</h5>
<p>Preheat the oven to 350&deg;F, line a baking sheet with foil and spray it with nonstick spray. Place 6 ounces of whole shelled almonds in a small bowl, cover them with 2 cups of boiling water and soak for 3 minutes. Drain completely.</p>
<p>Slip the skins off the almonds and toss them with 2 tablespoons of extra virgin olive oil. Spread in a single layer on the baking sheet and bake until light golden brown, 16 to 20 minutes.</p>
<p style="padding-bottom:16px">While the almonds bake, mix 1/2 teaspoon of paprika, 1/2 teaspoon cumin and 1/4 teaspoon salt in a small bowl. Sprinkle the spice mixture over the nuts as soon as you remove them from oven. Allow them to cool on the sheet, then transfer to a serving bowl.</p>

<h4 style="text-decoration: underline">Planning Tips</h4>
<p>When cheese and meats (charcuterie) are making up the whole menu you should plan on about 1 ounce of each cheese per person and about the same for the meats.</p>
<p style="padding-bottom:16px">Using these guidelines, 1/2 pound of each of the three cheeses and meats we've suggested here should serve 8 people. If you don't mind leftovers, you may want to allow a little extra of each to be safe.</p>

<h4 style="text-decoration: underline">Serving Tips</h4>
<p>Be sure to take your cheeses out of the refrigerator at least 1 hour before serving. Cheese has much better flavor and texture at room temperature.</p>
<p>Group each meat/cheese pairing together on decorative serving platters, wooden boards or marble slabs. Have plenty of small plates, picks and cocktail napkins available so your guests can enjoy the food easily throughout the evening.</p>]]>

<p>Manchego is a sheep's milk cheese produced in La Mancha is a popular Spanish cheese in America. It's a semi-firm, nutty flavored cheese that's available in a few varieties, from young and mild to aged and slightly sharp. Pair with a full-bodied red wine (Rioja).</p>
<h5>La Serena</h5>
<p>La Serena is a soft sheep's milk cheese with a sharp, earthy flavor and a rich creamy texture. It can be served as a "dip" by carefully slicing off the top and allowing people to scoop out the cheese with chunks of crusty bread. Pair with a full-bodied red wine (Tempranillo).</p>
<h5>Mahon</h5>
<p>Mahon is a semi-firm cow's milk cheese produced in the Balearic Islands. It has a salty, somewhat sharp flavor that conveys its windswept Mediterranean island origin well. Pair with a full-bodied red wine (Tempranillo).</p>
<h5>Monte Enebro</h5>

<h5>Idiazabal</h5>
<p>Idiazabal is a lightly smoked sheep's milk cheese from the Basque region of Spain. It has a hard texture and a sharp, nutty flavor with just a hint of smoke. Pair with a full-bodied red wine (Rioja).</p>
<h5>Valde&oacute;n</h5>
<p>Valde&oacute;n is a blue cheese made from both cow's and goat's milk. The cheese is wrapped in chestnut leaves for aging, which imparts a complex, mellow flavor and a soft, creamy texture.         <![CDATA[<p>Los Angeles cheese expert and columnist Barrie Lynn Krich (aka The Cheese Impresario) has provided us with some of her best tips on how to host a Vertical Cheddar Tasting party in your home.</p>
<p>To keep the selection for your cheese tasting party simple, Barrie Lynn suggests exploring different varieties from a single cheese producer. One of her favorites is Carr Valley Cheese in Wisconsin.</p>
<p>For a vertical tasting, purchase five cheddars of different ages. You can pair each with a different wine to give your guests a full range of flavors to enjoy.</p> 
<h5>The cheeses (in order of service)</h5>
<p>&bull; Mammoth Cheddar ~ pair with a fruity California Pinot Noir
<br />&bull; 1-Year Sharp Aged Cheddar ~ pair with Chianti Classico
<br />&bull; 3-Year Aged Cheddar ~ pair with Syrah
<br />&bull; 6-Year Aged Cheddar ~ pair with Merlot
<br />&bull; 10-Year Aged Cheddar ~ pair with California Cabernet Sauvignon</p>
<h5>The extras ~</h5>
<p>Some other goodies you might want to serve along with the cheese are crisp sliced apples, pears, fresh grapes, honey for drizzling, dates, figs and walnuts or pecans.</p>
<h5>Planning the tasting ~</h5>
<p>An important point to remember when preparing a cheese tasting is to allow your cheese to reach room temperature before serving. Take your cheese out of the refrigerator about an hour ahead of time.</p>
<p>Artisanal cheeses get their magnificent flavor from living organisms which become dormant in cold temperatures. By allowing them to warm up, you awaken the full flavor of the cheese.</p>
<p>For a tasting party where no other meal is included, figure on one ounce per cheese per person ~ in this case, about 6 ounces total per guest.</p>
<p>Barrie Lynn says that to truly experience the flavors of a wine and cheese pairing you should educate your guests on how to taste cheese properly. For maximum appreciation, she advises coating the palate with a bite of cheese, then taking a sip of wine at the same time.</p>
<p>Naturally, you can use the info here as a guideline for planning your own party. Experiment with different varieties of cheese and wine to discover your favorites.</p>
